I suspect that in a real fight instincts take over and you would not use all of those formal movements you learn in class

The form and repetition in striking and aiming in either boxing or striking martial arts is all that really matters. Nothing is going to land 100% or ever go as expected. 

The gay jujitsu stuff works way better, but only assuming your assailant has no one with them, is unarmed, is not prepared and has no experience and no by-standards get involved and win or lose you'll end up looking pretty gay.­ Also hopefully your 'hetero' man-hug chokes don't end up killing your opponent because you will be facing first degree murder or indefensible family lawsuits.
