Get a woman to do it.  My dad taught me that.  I don't do any cooking, cleaning, washing, etc -- I always have a girl around to do that.  Either my wife, or if I am overseas for a long time I either get a new GF or a 'helper' to do it.  No man should ever have to worry about potatoes.  We worry about money and work.

Get a green scrubber and use it only for root vegetables. Rinse thoroughly after each use and let it dry completely. No more peeling!

I use a Scotch-Brite stainless steel scrubber ball. Gets all that shit off just fine with little effort. Leaves the peel on.
