Soundtracks...most any Wes Anderson or Tarantino flick has good ones. Natural Born Killers, too, though I think a lot of that was due to Trent Reznor.
Scores, however...most were already mentioned in this thread already, but I love the scores for most of John Carpenter's stuff, plus anything by Goblin (Argento films).
Naw, they're just morons. Some dufus was telling Hitchcock of the importance of a good score in movies. He responded by making a movie without one and no one noticed
