Given that you need someone with five years or more experience, you would gain better utility with two of the following choices:
1. Hiring a windows guy with five years or more experience
2. Hiring a UNIX guy with five years of experience.

A windows programmer would likely know the strengths and weaknesses of the windows OS. Bringing this person to develop for the Mac OS could bring a fresh perspective to the application and it's development.
If you hire only Windows programmers to build windows applications you are going to get another windows application.
How that's worked out for you over the last ten years?
