Agreed but disagree - if you are going to make pickled beef or pastrami you need to "marinate" it for 20 days or more.
True for chicken and it's best to drop any fresh cut of meat in a brine wif some sugar in it for 20 minutes before cooking. Can't think of any exceptions except meats already cured.
